The menu—an attraction in itself—is defined by the inspired flavors and innovative dishes mastered by Chef Nobu Matsuhisa. Drawing inspiration from Japanese and South American flavors, it features signature dishes including Black Cod Miso, Rock Shrimp Tempura, and Yellowtail Sashimi.

Kitsune, Cocktail of the Month

Our Nobu Bar mixologists have created a cocktail that shifts in flavour from the first sip to the last. It’s called Kitsune, this month’s signature cocktail at Nobu Marbella, inspired by the shape-shifting fox of Japanese folklore.

The first sip is smooth and warm, with vanilla and oak from Patrón Reposado meeting delicate jasmine and bright citrus, and a touch of agave sweetness underneath. Then the character turns: fresh shiso and a pinch of shichimi, the Japanese seven-spice, bring a savoury, umami depth that’s a surprising departure from where the drink began.
